You loved the festive recipe in our last newsletter, so we wanted to share another recipe from Lobster for Josino. And what could be better than a refreshing drink that’s ready in minutes and tastes great.
Foams are an easy way to support a person with dementia who may have swallowing difficulties or at the end of life, to enjoy cooling nutritious flavours with texture especially during the warmer months. This easy recipe takes the flavours of summer to create a delicious drink for everyone to enjoy.
Mango lassi foam
Ingredients
- 1 cup mango, seeded and peeled
- 2 tbsp milk
- ½ tsp caster sugar
- 1 pinch ground cardamom
- 1 cup thick Greek yoghurt
- 8 small scoops of Spuma Instant
Method
- Blend all ingredients together. Remove ¾ cup of mango lassi and place in base of cream whipper gun. Add the Spuma Instant and screw lid of cream whipper.
- Charge with nitrous oxide canister and shake vigorously for two mins. Allow to rest in refrigerator for 10 mins before foaming the lassi into two glasses.
- Repeat the process for the left over lassi if needed or just have a refreshing drink.
